Instructions
Step 1: Preheat the waffle maker
Turn on your waffle iron to heat while you prepare the batter.
Step 2: Combine dry ingredients
Sift the flour into a mixing bowl. Whisk in the sugar, baking powder and salt until evenly blended.
Step 3: Add wet ingredients
Pour in the soy milk, melted coconut oil and vanilla. Stir just until a smooth batter forms—do not overmix.
Step 4: Grease and fill
Lightly brush or spray the hot waffle plates with oil. Add enough batter to cover the grid without overflowing and close the lid.
Step 5: Cook the waffles
Cook for 3–5 minutes, or until steam subsides and the waffle is golden and crisp. Repeat with remaining batter.
Step 6: Serve
Serve warm with maple syrup and fresh fruit, or your favorite toppings.
