
Fluffy Garlicky Vegan Mashed Potatoes
Ultra-creamy, garlicky mashed gold potatoes finished with warm non-dairy milk and vegan butter—fluffy, comforting, and weeknight-friendly.
Instructions
Step 1: Prep the potatoes
Peel the potatoes if you like, then cut each into quarters so the pieces are even.
Step 2: Cook until tender
Add potatoes to a large pot and cover with cold water by 1–2 inches (2.5–5cm). Bring to a boil, then cook until fork-tender, about 12–16 minutes.
Step 3: Drain and dry
Carefully drain in a colander, then return potatoes to the warm pot to steam off excess moisture for 1–2 minutes.
Step 4: Mash the potatoes
Mash directly in the pot with a potato masher until mostly smooth (small lumps are fine).
Step 5: Warm the milk and spices
In a small saucepan, whisk together the non-dairy milk, garlic powder, and onion powder. Add the vegan butter and melt over medium-low heat, simmering for about 2 minutes while whisking.
Step 6: Combine and adjust
Pour the warm butter mixture over the potatoes and fold until creamy. If needed, add a splash more warm non-dairy milk for looser texture.
Step 7: Season and serve
Season with salt and black pepper to taste. Serve hot.
